Winemaker's Notes:

Elviana Rose comes from the harmonious blend of Pinot Noir and Raboso, one of the oldest grape varieties in Veneto. Grapes are harvested late in autumn. The grapes are vinified separately and blended together prior to the second fermentation. The wine is obtained without pressing the grapes, with intact skins macerating to enrich the must. The resulting Elviana Rose is fresh with plenty of fruity aromas and its particular softness. The Charmat method fermentation goes on for 40 days at a temperature of 64°F in order to produce a fine, long-lasting and delicate perlage.
